Vegetable Kurma Recipe


6 Tomatoes - pureed

5 Onions

Chop and parboil the vegetables :

1 Cauliflower

250 gms carrot

250 gms peas

250 gms beans  (optional)

½ coconut grated

Few cloves of garlic and 1-inch ginger

Mint and Coriander leaves

1 tbsp Curd or Cashew paste

Garam Masala : 5- 6 cloves, 1 tsp saunf, 1 cinnamon stick, 3 to 4 cardamom pods


Grind all the Garam Masala ingredients into a powder

Fry the onions. Add the masala powder, tomato puree and cook well.

Add the par boiled vegetables.

Make a paste of coconut, pudina, corriander with a little curd/little cashew and add this to the vegetables and simmer.

Garnish with corriander leaves

Top the kurma with a tsp of ghee (optional)
